I can definitely get bored with steamed broccoli and carrots for easy veggie sides. LOVE this simple brocollini. Just be sure to keep a watchful eye on the dish….My little ones distracted me and I cooked this a tad longer than I had hoped. It happens….
- 1 bunch broccolini
- Kosher salt
- 2 tablespoons unsalted butter
- ½ lemon, zested
- 2 teaspoons garlic, minced
- 1 tablespoon lemon juice
- ¼ teaspoon black pepper
- Begin by blanching the broccolini. Bring a large pot of salted water to a boil. Fill a large bowl with ice and cold water. Blanch the broccolini in the boiling water for 2 minutes. Drain immediately and immerse in the ice bath.
- Melt the butter in a large saute pan. Add the lemon zest and garlic and stir. Drain the broccolini and add it to the saute pan. Heat and toss for 2-3 minutes. Add the lemon juice, ½ teaspoon salt and pepper. Toss well and serve immediately.
